Spaghetti and Eggs Recipe
Ingredients

- 4 ounces spaghetti or other long pasta
- 2 tablespoons butter
- 2 large eggs
- 2 teaspoons garlic powder
- 2 teaspoons ground black pepper
- 1 tablespoon minced onion
- 1 tablespoon dried rosemary (optional)
- Grated Parmesan cheese, to taste (optional)
Directions
- Bring a large pot of lightly salted water to a boil. Add the pasta and cook for 8-10 minutes until al dente. Drain thoroughly.
- While the pasta cooks, melt the butter in a large skillet over medium heat.
- Crack the eggs into the skillet and cook sunny-side up until the whites are just set but yolks remain runny. Do not break the yolks yet.
- Sprinkle garlic powder, ground black pepper, minced onion, and rosemary over the eggs as they cook, allowing the flavors to infuse.
- Transfer the hot pasta to a deep plate or bowl. Gently place the fried eggs on top.
- Carefully stir the eggs into the pasta, breaking the yolks to form a creamy sauce that coats the noodles.
- Serve immediately, optionally topping with grated Parmesan cheese for extra richness.

This dish is excellent! The richness of the creamy sauce enhanced by the egg yolks is simply delicious. Next time, I'll leave out the rosemary as its texture seemed a bit mismatched with the creamy pasta. Overall, a really fantastic dish!

This dish was fantastic! I didn't have high expectations initially, but I was completely impressed by how delicious it turned out. I decided to sprinkle the spices on top without measuring, using a bit less than the recipe called for. I also opted for onion powder instead of fresh onions. The addition of rosemary gave it a lovely Italian taste. It was so simple to make, incredibly tasty, and budget-friendly. Thank you for sharing this hidden gem!

I have tried this a few times (great minds and thin wallets think alike LOL) sometimes adding finely chopped cooked bacon and freshly grated Parmesan as a "one-man pasta carbonara." To those who think it sounds unappetizing, please give it a try before you judge. You won't regret it! The yolk creates a delicious sauce :)

Oh my goodness, this meal was absolutely delicious!! I used a touch of Spicy Red Pepper Roasted Garlic olive oil to cook my egg, and I added a few teaspoons of the pasta cooking water to make the sauce go further. Topping it off with grated parm was the perfect finishing touch. I can already tell that this dish will become one of my favorite go-to options for lunch or a quick dinner!

This recipe is a winner! It's incredibly simple to prepare and the results are fantastic. I opted for rice noodles and a splash of soy sauce, which added great flavor. Just a heads up, go easy on the rosemary as it can affect the texture when eating.

Review update: I enjoyed the dish overall, but I found the black pepper to be a bit overpowering for my taste. It was a bit too heavy-handed in the seasoning, but the overall flavor was still delicious.
