Cajun-Style Rice Pilaf

Cajun-Style Rice Pilaf

Ingredients

  • 8 ounces Italian sausage links
  • 2 cups water, divided
  • 1 pound shell-on medium shrimp
  • 3 tablespoons vegetable oil, divided
  • 1 cup chopped onions
  • cup chopped red bell pepper
  • 2 teaspoons Cajun seasoning
  • 1 cup long-grain white rice
  • cup Chateau Ste. Michelle Syrah Ros
  • cup frozen peas
  • Salt and pepper
  • cup chopped green onions

Directions

  1. Boil sausage in cup of water for 5 minutes. While the sausage is boiling, peel the shrimp, removing the shells and tails. Place the shells and tails in 2 cups of water and bring to a boil. Let the water simmer for 20 minutes to create shrimp stock.
  2. Grill the sausage links for about 5 minutes, or until fully cooked. While the sausage is grilling, brush the shrimp with tablespoon of vegetable oil and grill for approximately 2 minutes per side. Once grilled, remove the sausage and shrimp from the heat and set aside.
  3. In a medium pot, heat the remaining vegetable oil over medium-high heat. Add the chopped onions and red bell pepper. Saut for 3 to 4 minutes, or until the onions become translucent.
  4. Add the Cajun seasoning and rice to the pot. Cook and stir for 1 minute to toast the rice and release the flavors of the seasoning.
  5. Pour in the Syrah Ros wine, stirring briefly to combine. Next, strain the shrimp stock into the pot, ensuring that all the flavorful liquid is used. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 20 minutes, or until the rice is fully cooked.
  6. While the rice is cooking, chop the grilled shrimp and sausage into bite-sized pieces.
  7. Once the rice is cooked, add the frozen peas, chopped shrimp, and sausage. Stir well and cook for an additional 2 minutes to heat everything through.
  8. Season with salt and pepper to taste. Garnish with chopped green onions for a fresh, flavorful finish.

I made the recipe easier by cutting up the sausage and cooking it with everything else before mixing in pre-cooked rice and bouillon (since I didn't have any broth on hand). I decided to throw in some celery too, because you can't have Cajun food without the holy trinity! The end result was delicious.

I incorporated spicy sausage into this dish, but found it lacking in flavor. Adding more spice, along with extra peppers and peas, would make it more enjoyable.
