Cheesy Chicken and Broccoli Casserole Recipe

Ingredients:

Instructions:
Follow these simple steps to prepare your cheesy chicken and broccoli casserole:
- Preheat your oven to 350F (175C). Grease the bottom and sides of a 9x13-inch baking dish with butter or cooking spray.
- Boil the chicken. Bring a pot of water to a boil. Add the chicken breasts and cook for 5 to 10 minutes until the chicken is no longer pink in the center. Once cooked, drain and cut the chicken into bite-sized cubes.

- Bake the casserole. Place the dish in the preheated oven and bake for 20 minutes. After 20 minutes, remove it from the oven and sprinkle the remaining cup of Parmesan cheese over the top.
- Finish baking. Return the casserole to the oven and bake for an additional 3 to 5 minutes, or until the cheese is melted and bubbly.

Storing leftovers: Store any leftover chicken and broccoli casserole in an airtight in the fridge for up to 3-4 days. You can reheat it in the microwave or oven until heated through.
Freezing: This casserole can also be frozen. Allow it to cool completely, then transfer portions to freezer-safe bags or s. Wrap with foil for added protection against freezer burn. This had great flavor, but was even better the next day. Will be making this again. Should have let it cool a bit longer but was to hungry & anxious to try it.

This casserole is so creamy & light. Definitely a keeper. Substituted Cauliflower for broccoli since that's what I had. Cream of mushroom soup (no Cream of Chicken in the pantry). Threw in a handful of chopped onions & left-over fried bacon. This is one versatile casserole! And for the topping, instead of more cheese, I used a small crunched up bag of Ritz Crackers & drizzled melted butter over them.

This was delicious and will definitely be in regular rotation. I made a couple of changes to suit us. I only used 1 can of cream of chicken soup and increased the sour cream to 1 cup to cut the sodium. I also sprinkled some crumbled bacon on top near the end, and next time I think I'll mix it into the casserole because it definitely added some great smoky flavor. This is a great "make ahead" meal to prep on the weekend and bake for dinner during the week. It would also freeze well and makes a great dish to take to a gathering or to a friend.

I did alter a little. Used a condensed cream of cheddar soup instead of shredded cheddar and used cream cheese instead of sour cream. Poured in short fat rigatoni before adding to the casserole dish. However followed the rest of the recipe and it is heavenly. Thank you for the recipe!

Yes. I made the recipe then put it in a pie crust to make a pot pie. Wonderful. Being on Keto it fits the bill. Just use keto crust. You can also put it in cupcake pan and make mini pies.

I used 2.5 chicken breasts. Added 5 slices of crumbled bacon after required cooking time, then added the paramesan cheese, but put some extra on to cover the casserole top a bit more. Took 4 minutes to melt the cheese. I have a photo, but I can't download to my Mac. I can send it via my phone, only need address.

Made this tonight for the first time and was very pleased wth the outcome. I used fresh broccoli with 1 can of cream of chicken, 1 can of cream of mushroom. The onion in this is awesome (white). I paired it with rice for a delicious late dinner. The sprinkles of parmesan on top then broiling to brown made it just right.

Made this 3 times with rotisserie chicken Once exactly as the recipe. The other 2 times used cream of celery once and cream of chicken and cream of mushroom Delicious all three times Corn is as good addition to this recipe as well. Pretty much bullet proof

First time with this recipe and overall it was delicious, easy to prepare and easy on the eyes. However, this recipe is way to heavy on the secondary ingredients (cheese, sour cream...) When I dished it out, it was like scooping out gobs of melted cheese with a little chicken and broccoli mixed in. This is a great dish but the ingredients need to be better distributed. Perhaps more chicken and broccoli with less cheese.

I gave it 4 stars because it was very salty. I only put 1/2 the Parmesan cheese in it and it was still to salty. I did salt and pepper my chicken and grilled in the skillet instead of boiling. It had a good flavor but I will add something to make it less salty, maybe milk.

This was pretty cheesy! I did add a diced onion and a teaspoon of garlic powder. I also substituted the broccoli with spinach because that's what I had on hand and it turned out delicious! I will make this again and with broccoli this time.

For those talking about how salty it is you can make your own cream soup or buy low sodium soups and cheeses. I'm going to make this for Wednesday night Bible study.

I followed it exactly as written! I just added a little bit of cheddar cheese on top along with the Parmesan cheese, and added a half of a chicken breast extra ...my kids devoured it!!!
