Cheesy Corn Casserole Recipe
Ingredients
This recipe was developed at its original yield. Ingredient amounts can be scaled automatically, but cooking times and preparation steps remain the same. Note that not all recipes scale perfectly.
- 1 (11 ounce) can whole kernel corn, drained
- 1 (11 ounce) can cream-style corn
- 1 (8.5 ounce) package dry cornbread mix
- 1 (8 ounce) sour cream
- 1 cup shredded Cheddar cheese, divided
- 1 small onion, finely diced
- 1 large egg
Directions
- Preheat your oven to 350F (175C) and grease a 9x13-inch casserole dish thoroughly.
- In a large mixing bowl, combine the whole kernel corn, cream-style corn, dry cornbread mix, sour cream, 3/4 cup of shredded Cheddar cheese, diced onion, and the egg. Mix until the ingredients are fully incorporated.
- Pour the mixture evenly into the prepared casserole dish.
- Bake in the preheated oven for 25 minutes, allowing the flavors to meld and the casserole to set.
- After 25 minutes, sprinkle the remaining 1/4 cup of Cheddar cheese over the top.
- Return the casserole to the oven and continue baking for an additional 10-15 minutes, or until the cheese has melted and turned golden.
- Remove from the oven and let it rest for a few minutes before serving to enhance the texture and flavor.

Most excellent. I've used more cheese than the recipe requires, both in the batter and on top. It came out finger-licking good. Five stars.

One of the many reasons that this is one of my family's favs as well as mine is because it is pretty resilient if you bobble it--too wet--cook it longer--10 minutes before time don--check it--if dry--stop the cooking--got 10 oz sour cream left or even 12--dump it in--used you 9"x13" panns already--I used a smaller deeper pan and cooked a little longer--I like my cornbread a tad sweeter so I add 2 Tblsp. of sugar--seldom can anyone mess this recipe up--Oh--substituting an 11 oz can of shoepeg corn works well as do the larger amounts (14 oz) that someone else suggested. Occasionally I will ad a little melted butter or omit onion (daughter doesn't like onion)--also recipe is quite adaptable if you have the ingredients and are also cleaning out frige-once I added 6 oz cheddar-2 torn up slices of Gouda, some Havarti and three slices of extra sharp cheddar on top--this recipe is amazing--Love it .

I found this a bit dry, so in the future, I’ll start checking for doneness at 10 minutes instead of 20 in the final bake. Also wondered if baking it in a smaller dish might help, as well. It certainly is “corny,” but it seems like it’s missing a little something. Maybe some chopped jalapeños might give it a bit of a kick and more flavor. I did give it a sprinkle of paprika before heading into the oven to give it a little more color and eye appeal. It was a nice side dish for some air fried fish.

I've had varied versions of this before. Never with onion and without butter. SO GOOD!!! Doubled the recipe with the exception of the corn. I used 2 cans of drained whole kernal and only 1 can of creamed corn and stuck with the one small onion. HIGHLY recommend sweet Vidalia onion. Cook time is a solid hour. I mixed all the cheese into the casserole rather than adding some to the top. I did rotate 180* half through, but my oven needs it. Next time I think I will swap a can of whole kernal for some Glory Foods canned yellow squash and onions!

This is a great recipe. I do make a couple adjustments. I use 1 cup cottage cheese instead of the sour cream, and I sauté the onions in 3 Tbs butter and pour onion/butter mixture into batter before baking. I come back to this again and again. Great with bbq pork.

I used one can of drained whole kernel corn, one can of creamed corn, 2 cans of drained Fiesta Style corn, one egg, cream cheese instead of sour cream, steak seasoning, Zatarain’s Jalapeño Cheese corn bread 12.5 oz? and doubled the cheese.

Totally awesome!!!! I used 1 cup of sharp cheddar in the recipe and 1 cup on top. I also baked it in an 8X8 pan cuz we wanted it thick and I baked it for 30 minutes and 25 minutes with the cheese on top. This is a keeper for sure and we like it better then the other corn casserole without the cheese we always made from this site which we gave a 5 star also.

Excellent recipe!! Easy to follow instructions and everyone raves about it. I added some fresh chopped Serrano peppers and green onions for a bit of spice and color.

This is a summer holiday favorite. It’s a perfect side with smoked meats. I’ve added a couple of small cans of green Chilli’s to give it a little pep. Also have added a couple of teaspoons of pepper. Give this a try. This should be a recipe that pops up first on Google.

A Delicious Combination of Chunky Corn Kernels and Smooth Creamy Corn!My husband states he could have eaten the whole casserole in a single sitting!! He also said it might have been the high point of his day!!!We added a little salt for a flavorful finish. The only changes made were to add a 1/8 cup jack cheese to the top of the casserole for the final cooking.This is a keeper in our home!!!!

I made this recipe with Jiffy cornbread instead of regular cornbread, did not use onion or an egg and it has a light sweet taste. It can be considered a good side dish or a light dessert.

The only change I made to it is if you like jalapeños and you don’t have a small onion just put a small jar of jalapeños in the mixture with the shredded cheese and it tastes good

I have had other recipes that were better. I did not like the cheese on top as it browned too much before the rest of it baked. I had to cover with foil to finish baking it. The cheese adds not ing extra to the recipe taste. I prefer the Jiffy mix recipe

I leave out the onion and add extra cheddar. I make it every year for Thanksgiving and Christmas. Delicious! 😋

Read the suggestions, added some bacon bits and a touch of Tajin to the top for color. Taking it to a pot luck tomorrow. Doubled the recipe. Turned out beautifully.
