Grilled Vegetable Salad
Ingredients:
- 1 large eggplant, peeled and cut into 1/2-inch slices
- 1 large sweet onion, peeled and halved
- 1 red bell pepper, halved and seeded
- 1 green bell pepper, halved and seeded
- 1 small zucchini, cut into 1/2-inch slices
- 8 fresh tomatoes, chopped
- cup balsamic vinegar
- cup olive oil
- 12 fresh basil leaves
- Salt and pepper to taste
Directions:
- Preheat the grill to medium-high heat and lightly oil the grate.
- Place the eggplant, onion, red bell pepper, green bell pepper, and zucchini on the grill. Grill the vegetables until they are slightly softened and have visible grill marks on each side, which should take about 15 to 30 minutes.
- Remove the vegetables from the grill and allow them to cool slightly. Once cooled, cut them into bite-sized cubes and transfer them to a large mixing bowl.
- Add the chopped tomatoes, balsamic vinegar, olive oil, basil leaves, salt, and pepper to the bowl with the grilled vegetables.
- Toss everything together thoroughly, ensuring the vegetables are well-coated with the vinegar and oil mixture.
- Refrigerate the salad for at least 8 hours, or overnight, to allow the flavors to meld together.
- Before serving, give the salad another gentle toss to redistribute the ingredients and flavors.
