Chicken and Rotini Casserole
Ingredients
- 3 cups shredded cooked chicken
- 2 tablespoons cayenne pepper sauce
- (16 ounce) package rotini pasta, cooked and drained
- 1 stalk celery, sliced
- 1 (10.75 ounce) can Campbell's Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
- cup blue cheese salad dressing
- 1 cup shredded Monterey Jack cheese
Directions
- Preheat your oven to 350F (175C). Lightly grease an 11x8x2-inch baking dish.
- In a large mixing bowl, combine the shredded chicken and cayenne pepper sauce. Stir until the chicken is evenly coated with the sauce.
- Add the cooked rotini pasta, sliced celery, cream of chicken soup, blue cheese dressing, and cup of shredded Monterey Jack cheese to the bowl. Mix everything together until well combined.

This dish was fantastic! I was hesitant about the level of spiciness, but the kids devoured it! Not a single noodle remained! I increased the amount of Frank's sauce, opted for ranch instead of blue cheese dressing, and substituted rigatoni for rotini since I was out. I will absolutely be making this again many more times!

I prepared this dish for dinner for my boyfriend, and he absolutely adored it. Not a single bite of the casserole was left. The only modification we made was adding about half a bottle of Frank's Red Hot Buffalo Sauce (we enjoy spiciness) and around a cup more of cheese than the original recipe specified.
