Ingredients:
For the Meatloaf:
- 1/4 cup bread crumbs
- 1/4 cup whole milk
- 1 lb ground round (85/15)
- 1/2 cup finely chopped yellow onion
- 1 large egg, lightly beaten
- 2 teaspoons chopped fresh thyme, plus more for garnish
- 1 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
For the Glaze:
- 1 tablespoon ketchup
- 1/2 teaspoon apple cider vinegar
- 1/2 teaspoon light brown sugar
- 1/4 teaspoon Worcestershire sauce
- Cooking spray
Directions:
Step 1: Gather all ingredients and preheat your air fryer to 350F (175C).
Step 2: In a medium bowl, stir the bread crumbs and milk together. Let the mixture sit for 5 minutes so the breadcrumbs soften.
Step 3: After 5 minutes, add the ground beef, chopped onion, egg, thyme, salt, and pepper to the bowl. Mix everything together evenly without over-mixing to keep the meatloaf tender.
Step 4: Shape the meat mixture into two small meatloafs, each about 3 x 4 1/2 inches in size.
Step 5: In a small bowl, combine the ketchup, apple cider vinegar, brown sugar, and Worcestershire sauce. Stir well and set the glaze aside.
Step 6: Spray the air fryer basket with cooking spray or line it with parchment paper for easier cleanup. Place the meatloafs into the basket and spray the tops with a little more cooking spray.
Step 7: Air fry the meatloafs at 350F for 20 to 25 minutes, or until nicely browned. After 18 minutes of cooking, brush the meatloafs evenly with the prepared glaze and continue cooking until the internal temperature reaches 155F (68C) when checked with an instant-read thermometer.
Step 8: Remove the meatloafs from the air fryer and let them rest for 5 minutes.
Step 9: Garnish with fresh thyme leaves, slice, and serve. Enjoy your perfectly cooked air fryer meatloaf!

Meatloaf is a beloved comfort food that has been a staple in households around the world for decades. Traditionally baked in an oven, this classic dish has been reinvented for the modern kitchen with the rise of air fryers. The air fryer meatloaf recipe offers a quicker, healthier, and equally delicious alternative to the conventional method. It provides all the savory flavors and juicy textures of a traditional meatloaf with a crispy, golden finish.
Origin of Meatloaf
Meatloaf, or "Hackbraten" in German, has origins dating back to the 5th century. Early versions of meatloaf were crafted from leftover meats, breadcrumbs, and spices, providing a way to stretch ingredients and make them last longer. The dish became particularly popular in the United States during the Great Depression, when economical meals were a necessity. Over time, it has evolved with regional variations and cooking techniques, such as the incorporation of different meats and toppings. The air fryer version of meatloaf is a modern twist, catering to convenience while preserving the essence of this classic dish.
Regional Variations of Meatloaf
While meatloaf is known worldwide, its preparation and flavors differ depending on the region. In the U.S., it is typically made with ground beef, breadcrumbs, onions, and seasonings, topped with a sweet and tangy ketchup glaze. In contrast, European versions might use a blend of meats such as pork and veal, and often feature rich sauces or fillings like mushrooms or cheese. Additionally, in countries like Germany, meatloaf may be served with hearty sides like mashed potatoes and sauerkraut. The air fryer meatloaf is a versatile recipe, easily adaptable to various tastes and dietary preferences.
How It Differs from Other Meatloafs
What sets air fryer meatloaf apart from traditional oven-baked versions is the cooking method. The air fryer allows for quicker cooking times, resulting in a meatloaf that is perfectly crispy on the outside while remaining juicy and tender on the inside. The use of an air fryer also reduces the amount of oil needed, making this a healthier option compared to deep-frying or even oven roasting with excess fat. Additionally, the glaze applied toward the end of cooking enhances the flavor without overwhelming the natural taste of the meat. The result is a deliciously balanced meatloaf with less fuss.
Where is Meatloaf Typically Served?
Meatloaf is a popular dish in many households across the world and is often served as a main dish during dinner. In the United States, its a common choice for family meals, Sunday dinners, and potlucks. Meatloaf is also frequently found on restaurant menus as a comforting, home-style offering. It pairs wonderfully with sides like mashed potatoes, roasted vegetables, or a crisp salad. In some cultures, leftovers from meatloaf might be used in sandwiches or as a topping for salads. Its versatility in serving options makes meatloaf a go-to for both weeknight dinners and special occasions.

Sooooo good & soooo easy. Th only things I skipped were the pepper & mushrooms simply because I don't like them & oil because I didn't feel it was needed & it wasn't. The loaf was moist & tender, held its shape & tasted yummy. I'll be repeating this experience again.

I loved the flavor of this recipe, but I used Italian seasoned bread crumbs. I’m a new air fryer user (got one for Christmas). So far everything I’ve made has been too salty, even though the recipes were for air frying, and I’m big on salt. Therefore, I reduced the salt to a half a teaspoon. I also added a brown sugar, mustard and ketchup glaze from another recipe 10 minutes before time ended. The meatloaf was already getting really brown, so I hoped the glaze would slow that process. However, the glaze was super crispy. I have a Ninja and chose the roast option to cook my meatloaf. The default temp was 325. Im thinking next time I will use that temp and check it at 25 minutes and check it for fineness, then add the glaze and add five more minutes to the timer. Still, it was very good!

Simple easy recipe. Tasty flavorful meatloaf. As other reviewers have mentioned, cook time will vary with your make and model air fryer. I reduced the temperature to 375 degrees and cooked the meatloaf in an aluminum loaf pan that fit perfectly into the basket of my air fryer. I found it took about 30 minutes to cook to temperature in my model. I also used a meatloaf mix (pork, beef, and veal) for more flavor.

Made this in July 2024 - didn't have fresh thyme; added 1/2 pkg of Lipton dry onion soup and cut down on salt. Halfway through cooking i turned the meat loaf over, later added glaze. It got nicely crisp (not burned) on outside and my housemate said it's the best meat loaf she ever had. Well, actually, not as good as my grandma's, LOL....But very good.

We had this tonight for the first time. Followed the recipe to a tee, except I added one additional ingredient, about a tablespoon of worsetershire sauce for a bit of tang. Absolutely perfect, with a nice crust, but moist inside. Yum, highly recommended!

I didn’t put onion (my husband can’t eat), but added onion powder. It was great, but won’t cook as long.

Looked for an air fryer recipe as I was baking potatoes and carrots in the oven and so happy I found this recipe! This was my first time not only making meatloaf but tasting it also. The glaze was delicious. I doubled the recipe, used dried thyme, maybe about 1-2 tsps, oatmilk instead of milk (dairy allergies) and it came out great. Adding this to our rotation!

The recipe itself is excellent, easy to make and delicious. Just an FYI, I checked on the meatloaf after 15 minutes in the air fryer and at that point it was a bit overdone already. The recipe calls for 25 minutes. I'm sure air fryers vary; just be sure to check early and often to see if the meatloaf is cooked.

This is the best meatloaf EVER. I've made it as written and I've also started making it with cheddar cheese also mixed in to the meat before making the two loaves and air frying. Even my kids absolutely love it.

I was cooking for a few extra and I knew I only had 1 lb of ground beef so I added 1lb ground pork and it turned out great.

Tasty and loved the glaze! Added 1/4 cup grated parm to breadcrumbs and used 1 Tbsp of onion flakes instead of raw onion. Also added 1 Tbsp of Worcestershire to the meat mixture as suggested. I might add a little more next time. Did not have any fresh or dried thyme. Total cook time was 23 minutes.

It tastes better cold the next day. With salad I really enjoyed but think will add curry powder next time just to spice up a little but otherwise really love it.
