Strawberry Oatmeal Breakfast Bars
Ingredients:
- 1 pound fresh strawberries
- lemon, juiced
- 2 tablespoons white sugar
- 2 teaspoons cornstarch
- 1 cups old-fashioned rolled oats
- cup all-purpose flour
- cup whole wheat flour
- cup packed light brown sugar
- teaspoon kosher salt
- teaspoon ground ginger
- 8 tablespoons unsalted butter, melted
Directions:
- Preheat the oven to 375F (190C). Butter a 9x12-inch baking dish.
- Remove the green tops from the strawberries using a small sharp knife or strawberry huller. Cut the berries in half, placing them cut-side down on the work surface. Slice each half lengthwise 3 to 5 times, then cut across to create uniform dice.
- In a mixing bowl, combine the diced strawberries, lemon juice, sugar, and cornstarch. Stir until everything is well combined and the cornstarch dissolves. Set aside.
- In another mixing bowl, combine oats, all-purpose flour, whole wheat flour, brown sugar, salt, and ground ginger. Pour in the melted butter and stir until the dry ingredients are evenly coated with the butter.
- Transfer about 60% of the oatmeal mixture into the prepared baking dish and spread it out into an even layer. Press it down lightly using the back of a spoon or spatula to compact it.
- Using a slotted spoon, evenly distribute the strawberries on top of the oatmeal layer. Do not press them down. Reserve any accumulated juices in the bowl.
- Top the strawberries with the remaining oatmeal mixture. Press it down lightly with the back of a spoon or spatula.
- Drizzle the reserved strawberry juices over the top of the bars.
- Bake in the preheated oven for about 45 minutes or until the top is golden brown. Once done, press the top down slightly with a spatula.
- Allow the bars to cool completely, about 1 hour, before cutting them into squares or bars and serving.
Chef's Notes:
- You can use only one type of flour (either all-purpose or whole wheat) if you prefer.
- For a thicker bar, use an 8x8-inch baking dish. You may need to extend the baking time slightly to accommodate the thicker layers.
- If you want a more dessert-like treat, top the bars with icing after baking.

After watching Chef John's video last night I knew what we were making for breakfast today. I didn't make any changes except to use frozen strawberries. My 3 kids loved it and ate half the 9x13 by themselves. They requested we try apples next time. This one is a keeper!

I put off making this for like a solid week. When i finally made it, it was so easy i wondered why i put it off so long. So, the main thing, i forgot brown sugar so the only sweetener was probably less than a 1/4 sugar in the strawberries. And honestly? Pretty good. My strawberries were very tart but i only missed the sweetness a little. I also made this in a 7x11 pan for thicker bars are i personally feel like that was a good choice. I also browned my butter a bit instead of just melting it. I also ate a piece warm and was dying to slap a scoop of ice cream on it cause it would have been perfect. But it was still a solid snacc to eat on its own, very enjoyable.

Halved and put in 8x8. Make sure there is enough butter for oat mixture to hold together after baking. Add 1/8 tsp nutmeg.

I made this exactly per the recipe, which is what I like to do the first time so I don't screw it up with my own spin on it LOL. Everyone loved it, they were gone in no time. I'm thinking of future incarnations with blueberries, maybe apple pie filling, and a strawberry-rhubarb version if I can ever get my hands on some rhubarb. Thanks Chef John! LOVED these bars. I used the tip and made another batch with a smaller pan so the bars would be thicker and I definitely preferred that. More filling and less crumbly that way.

These turned out fantastic! I forgot to spread 60% on the bottom and 40% on the top, it was more like 50, 50. but it still turned out great. I stressed about getting the first one out, but lo and behold it popped right out after it was cooled completely. I used my steel bench scraper, it has a very sharp edge, to cut and pop them out. I also used my 7 x 11 baking dish.

Made per recipe the first time, have made four times since, used less sugar, also substituted frozen berries and other kinds of berries, it has all been excellent. Have also done almond flour instead of wheat flour and turned out great!

Love These! I make them with frozen blueberries and my family loves them. I also swap the AP flour for almond flour for a bit more fiber/protein and have made with GF flour for a friend.

I was worried these would be to thin for me to enjoy but I am loving this breakfast treat and find myself grabbing a thin slice as a little dessert. They are just sweet enough to satisfy a sweet tooth without being too sweet for a breakfast food. I made mine in a 9x13 pan so had to use more of the oatmeal mixture on the bottom, which resulted in less to sprinkle on top. Next time I may increase the oatmeal layer to 1.5 times the recipe. I also substituted frozen mixed berries because I did not have any fresh strawberries. I think any berry or frozen fruit will do and look forward to experimenting with other flavors. Including maybe adding some type of extract, like vanilla or almond, or adding some nuts in the oatmeal mixture.

Baked in an 8x8 pan and added 5 minutes to bake time. Used coconut oil instead of butter.

I am happy for those of you who had a delicious outcome. Such was not the case for me. I browned the butter, decreased brown sugar a bit, used a mix of strawberry and raspberry preserves. Oat mixture was a disappointment that didnt stick together and tasted flourly. Maybe it needed other changes at higher altitude. Oh well :).

Haven't tasted it yet, but it came together according to the recipe just fine. I used fresh strawberries & had enough juice left over for a nice drizzle on top, as expected. I like my bars thicker, so I used an 8x11 pan instead of the 9x12. Kept the cooking time the same - 22 minutes - b/cs my oven runs a little hot so I knew the thicker bars would cook in the suggested time frame. Looking forward to breakfast tomorrow!
