Bermuda Cassava Pie Recipe
Ingredients

- 12 eggs
- 1 tablespoon salt
- 1 tablespoon vanilla extract
- 1 tablespoon ground nutmeg
- 1 teaspoon ground dried ginger
- 3 cups sugar
- 3 sticks butter
- 5 pounds frozen cassava (yucca), thawed and drained
Directions
Step 1: Preheat your oven to 350F (175C). Grease a 9x13-inch baking pan with butter or cooking spray.
Step 2: In a large bowl, combine the eggs, salt, vanilla extract, nutmeg, and ginger. Beat the mixture to incorporate air, making the eggs light and fluffy.
Step 3: In a separate bowl, beat together the sugar and butter until smooth and creamy.
Step 4: Add the egg mixture to the butter-sugar mixture. Stir gently to combine, making sure everything is well mixed.
Step 5: Place the thawed cassava in a large mixing bowl. Add the combined egg-butter mixture and stir until the cassava is evenly coated with the mixture.
Step 6: Pour the cassava mixture into the prepared baking pan, spreading it out evenly.
Step 7: Bake in the preheated oven for 1 hour. After 1 hour, reduce the temperature to 250F (120C) and continue baking for another 2 to 2 1/2 hours, or until the pie is set and firm to the touch.
Cook's Note
If you'd like to add meat to the dish, you can incorporate chicken or pork. About 3 to 5 pounds of cooked meat can be added to the center of the pie. To do this, pour 1/2 to 2/3 of the batter into the pan, then spread the meat around the center, leaving some of the batter around the edges. Pour the remaining batter over the meat.
