Peaches and Cream, Literally Recipe

Cook Time: 10 minutes

Ingredients

  • 4 medium fresh peaches, or as needed
  • cup white sugar, or to taste
  • cup water
  • 1 cups heavy cream

Directions

  1. Cut each peach in half along the crease, twist open, and remove the pit. Peel and slice. Cut slices in half to get approximately 2 cups of sliced peaches.
  2. In a saucepan, bring the sugar and water to a boil over medium-high heat. Let it boil until a syrup forms, about 3 minutes.
  3. Stir in the peaches until they are evenly coated with the syrup. Bring the syrup back to a light simmer for about 1 minute.
  4. Remove the saucepan from the heat immediately. Pour the mixture into a bowl and let it cool for 15 to 20 minutes.
  5. Using a slotted spoon, transfer the peaches to a large bowl. Discard the simple syrup or reserve it for another use.
  6. Pour the heavy cream into the bowl with the peaches and stir gently to combine.
  7. Divide the mixture evenly between six serving glasses or bowls. Cover with plastic wrap and refrigerate for at least 3 hours, or until fully chilled and the cream has absorbed the peach flavor.

Chef's Notes

If your peaches are very sweet, you can skip the simple syrup step (Step 2).

For a variation, you can try a cooked-cream version. After Step 2, simmer heavy cream with cup white sugar in a small pot until slightly thickened, about 3 minutes. Remove from heat and stir in 2 teaspoons lemon juice, then let it cool slightly. Transfer peaches into serving glasses using a slotted spoon and pour the warm cream mixture over the peaches. Cover with plastic wrap and refrigerate until completely chilled. For a finishing touch, reduce the leftover peach syrup by simmering it for 3 to 5 minutes. Let it cool and spoon it over each serving.

So so easy! The hardest part was waiting for it to cool in the fridge. I separated a small part of the peaches & cream into a ramekin and put it into the fridge so I could test it early. I left the rest to chill overnight. :) I also discovered that a little bit of cinnamon adds so much to the flavor. I agree with Chef John that this dish doesn’t want for sweetness, but go ahead and sprinkle some cinnamon on top! I think any more sugar or vanilla flavoring would be too much. This dish is heavenly as it is.

I like it! If you want to go really simple, just put a sprinkle of sugar on the peach slices (or Fruit Fresh to be sure the fruit doesn’t turn brown). Then pour on a bit of heavy cream and enjoy. Or whip the cream if you prefer……. Just be sure to use real cream - not whipped topping of any kind!! That’s the way my Mom served them back in the 50’s.

Outstanding taste and simplicity. You might want to change the wording in step one regarding the halving and slicing of the peaches. While this wording probably works fine for freestone peaches, earlier varieties of cling or cling stone peaches require a little bit different technique.
