Granita di Caffe con Panna (Italian Coffee Granita) Recipe
Ingredients

Original recipe (1X) yields 4 servings
- 1 cup water
- cup white sugar
- 1 cup strong espresso coffee
- 1 teaspoon vanilla extract (optional)
- 1 cup whipped cream, or to taste
Directions
Step 1: In a small saucepan, bring water and sugar to a boil. Let it simmer until the candy thermometer reads 250F (120C), which should take around 5 minutes.
Step 2: Remove the saucepan from the heat and stir in the espresso coffee and vanilla extract, if using.
Step 3: Transfer the mixture to a metal bowl and mix thoroughly.
Step 4: Allow the granita mixture to cool to room temperature, about 10 minutes.
Step 5: Once cooled, place the bowl in the freezer for 1 hour.
Step 6: After 1 hour, stir the granita mixture vigorously to break up the ice crystals.
Step 7: Return the bowl to the freezer and repeat the stirring and freezing process 4 to 5 more times over the course of 2 to 2 1/2 hours. This will give the granita its fluffy texture.
Step 8: Spoon the whipped cream into 4 short glasses, filling them about halfway.
Step 9: Divide the granita mixture evenly among the glasses.
Step 10: Top each serving with the remaining whipped cream and serve immediately.
