Scrambled Tofu Recipe

Ingredients:
- 1 tablespoon olive oil
- 1 bunch green onions, chopped
- 1 (14.5 ounce) can peeled and diced tomatoes with juice
- 1 (12 ounce) package firm silken tofu, drained and mashed
- Ground turmeric to taste
- Salt and pepper to taste
- cup shredded Cheddar cheese (Optional)
Directions:
- Heat the olive oil in a medium skillet over medium heat. Add the chopped green onions and saut until they become tender, about 2-3 minutes.
- Stir in the diced tomatoes along with their juice and the mashed tofu. Mix well to combine the ingredients.
- Season the mixture with salt, pepper, and a pinch of ground turmeric, adjusting to your taste preferences.
- Reduce the heat to low and simmer the mixture, stirring occasionally, until heated through, about 5-7 minutes.
- If desired, sprinkle the shredded Cheddar cheese on top and allow it to melt before serving.
