Scrambled Tofu Recipe

Ingredients:

  • 1 tablespoon olive oil
  • 1 bunch green onions, chopped
  • 1 (14.5 ounce) can peeled and diced tomatoes with juice
  • 1 (12 ounce) package firm silken tofu, drained and mashed
  • Ground turmeric to taste
  • Salt and pepper to taste
  • cup shredded Cheddar cheese (Optional)

Directions:

  1. Heat the olive oil in a medium skillet over medium heat. Add the chopped green onions and saut until they become tender, about 2-3 minutes.
  2. Stir in the diced tomatoes along with their juice and the mashed tofu. Mix well to combine the ingredients.
  3. Season the mixture with salt, pepper, and a pinch of ground turmeric, adjusting to your taste preferences.
  4. Reduce the heat to low and simmer the mixture, stirring occasionally, until heated through, about 5-7 minutes.
  5. If desired, sprinkle the shredded Cheddar cheese on top and allow it to melt before serving.
