Refreshing Strawberry Hibiscus Coconut Drink
This light and refreshing beverage combines the vibrant flavors of hibiscus, wild strawberry, and coconut for a perfect treat on a warm day. Here's how you can prepare it in just a few simple steps.
Ingredients
- cup water
- cup white grape juice or white cranberry juice
- 1 serving wild strawberry sugar-free drink mix (such as Crystal Light)
- 1 (2 g) bag hibiscus tea (such as Tazo Passion)
- 2 cups refrigerated unsweetened coconut milk
- Ice cubes, freeze-dried strawberries, or sliced fresh or frozen strawberries for garnish (optional)
Directions
- In a glass, combine the water, white grape juice (or white cranberry juice), and the wild strawberry drink mix. Stir until the drink mix is completely dissolved.
- Place the hibiscus tea bag into the mixture and let it steep for about 5 minutes. Note: It doesn't need to be hot, just allow the flavors to infuse.
- After 5 minutes, remove the tea bag and discard it.
- Fill two tall glasses with ice cubes.
- Divide the strawberry-tea mixture equally between the two glasses, then pour in half of the coconut milk into each glass. Stir gently to combine.
- If desired, add freeze-dried strawberries or fresh/frozen sliced strawberries as a garnish. Stir to incorporate or leave them on top for a decorative touch.
