Chicken Nachos with Refried Beans Recipe
Ingredients
- 1 (14.5 ounce) package tortilla chips
- 1 (16 ounce) can refried beans
- 2 cooked skinless, boneless chicken breasts, cut into bite-sized pieces
- 1 cup canned jalapeo pepper slices
- 12 ounces shredded Cheddar cheese
Directions
Step 1: Preheat the oven to 350F (175C). Line a large rimmed baking sheet with parchment paper.
Step 2: Arrange the tortilla chips in a single layer on the prepared baking sheet.
Step 3: Spread the refried beans evenly over the chips.
Step 4: Layer the cooked chicken pieces and jalapeos on top of the beans.
Step 5: Sprinkle the shredded Cheddar cheese evenly over the entire dish.
Step 6: Place the baking sheet in the preheated oven and bake for about 6 minutes, or until the cheese is melted and bubbly.
Cook's Note
You can experiment with different types of meat such as taco meat, beef fajitas, or even crawfish. All of these combinations work wonderfully with this dish!

Who doesn't love nachos? This is simple to throw together and will be devoured in minutes. I've been making these since I was a kid (minus the chicken) and the chicken added a nice touch. This recipe can easily be adapted to individual servings that can even be done in the microwave if you choose. The chips will stay crisp but they will not get that nice brown color that they get in the oven. Either way, this recipe is simple and good.
