Easy Blini (Russian Pancake) Recipe
Ingredients

- 1 cup all-purpose flour
- teaspoon salt
- teaspoon baking powder
- cup milk
- 2 tablespoons milk
- 1 large egg
- 1 tablespoon melted unsalted butter
- 1 tablespoon unsalted butter
Directions
Step 1: Gather all ingredients.
Step 2: In a bowl, combine the flour, salt, and baking powder.
Step 3: In a separate bowl, whisk together cup plus 2 tablespoons of milk, egg, and 1 tablespoon of melted butter.
Step 4: Add the wet mixture into the flour mixture and stir until the batter is fully combined.
Step 5: Heat 1 tablespoon of unsalted butter in a large skillet over medium-low heat.
Step 6: Drop the batter by the tablespoon onto the heated skillet, cooking several blini at a time.
Step 7: Cook the blini until bubbles form on the surface, about 1 to 2 minutes.
Step 8: Flip the blini and cook for about 1 minute more, until golden brown.
Step 9: Remove the cooked blini and transfer to a plate lined with paper towels to absorb excess butter.
Step 10: Repeat with the remaining batter, adding more butter to the skillet if necessary.
Recipe Tip
For a more traditional taste, replace 1/3 cup of the all-purpose flour with 1/3 cup of buckwheat flour.

I found this recipe to be good. I did end up adding more milk (maybe a cup) and a little bit of sugar. But with those two additions it was just like my mother's recipe from Russia.

Nobody is correct. Blini are not pancakes but crepes. They are supposed to be thin and the same size as your skillet. What is pictured here look like oladyi or oladi and they are pancakes.

Blini is closer in thickness to crepes, rather than pancakes.

I like the simplicity and you really can impress your guests. If you try to buy 20 mini blini pancakes online or at a specialty store you can be looking at paying between $20 and $40 and this recipe is no more than four dollars in ingredients.
