This is a recipe my family has made for over 50 years. One can adjust the amount of each ingredients to suit your taste. We would use a meat grinder to grind the ham. Now, a food processor works nicely and saves time. I process the egg whites and save the cooked yokes. The yokes are mashed and mixed with the mustard and mayo and then mixed into the ham mixture. (I also start with a smaller amount of these ingredients, so the ham salad is not overly moist. One can always add a little more to reach the desired consistency) We serve it between two slices of toast with a couple leaves of lettuce. Chilling it prior to serving is best, giving the individual flavors time to blend together. Be sure to refrigerate the leftovers.

Using this recipe as inspiration, I coarsely chopped the ingredients instead of using my food processor. I subbed dill pickle relish for sweet and added a couple dashes of smoked paprika. Delicious on King’s Hawaiian rolls with a side of leftover crudité and corn chips.

Increased the amount of pickle relish, and reduced the mayo. Added a shake of black pepper too. The most time consuming part of making this was processing the ham and vegetables in my blender to get the size as small as possible, without making it too mushy. I processed each ingredient separately to a minced size. I liked this very much and plan to make it again.

I will admit I don't like boiled eggs, so I fixed that by grinding them in the processor - perfect! What my family agreed killed this recipe was the relish! 🤢 We thought it was too sweet and really a waste. When I follow my French way we mince dill pickles to put in as well as Dijon mustard. I will actually start adding boiled eggs to my ham sandwich ( ground up in the processor) but continue on with the French recipe.

A trip down memory lane. Mom used to make this with leftover Easter ham and ground the ham up with one of those hand-cranked meat grinders that clamped onto the edge of the kitchen table. I used this as a stuffing for appetizers. Stuffed it into English cucumber disks (about 1 inch thick, hollowed out a bit to make room for the ham salad), celery, and sugar snap peas. Took this to a party and they all disappeared.

I can't decide if its a 4 or 5 star. The family really liked it. I finally got to use my meat grinder on the smaller grind. I added more celery, onion and relish than it said. I like the sweetness of the relish. We made sandwiches with lettuce and cheese. Our boys loved it so we were happy. We doubled the recipe so we are happy to have leftovers during this quarantine.

This is a delicious, simple recipe exactly as written, but if using for sandwiches instead of crackers I feel it needs a little more mayo, mustard and relish to boost the flavor and stand out against all the bread. Also, the creamier texture when made this way helps keep little pieces of ham from falling out of your sandwich as you eat it.

I had some leftover, slightly overcooked ham from Thanksgiving that I wanted to use up and found this. While I like hard boiled eggs, I didn’t like the idea of them in this - especially since I planned to serve this on crackers (vs a sandwich), so - I omitted them. The rest - from onions to relish - I made as written. Overall, this elevates the overcooked ham and was a nice appetizer on our table. I imagine if I my ham had not been overcooked, I would have liked this even more and as such, giving this recipe 5 stars (it’s not the recipe’s fault my ham is dry!) I would make this again! Thanks smile_u_nut!

I ground up everything in my Ninja. So it was so smooth and very tasty. It made enough for me to share with my neighbors. I used the left over Easter ham. That was a good use for it. Thanks for this good recipe

Made it, exactly, well, almost exactly, Yummm, but have to say I did use Honey Baked Ham, which is yummm on its own. I’m not a big ham fan but thank you, thank you, thank you for sharing this family goodie. Don’t hesitate to make it, it will be a hit, oh, and I used my rough meat grinder on my Kitchen Aide mixer, perfect and took about 20 min start to licking the spoon.

So this is one of the first recipes I’ve ever made as directed with most of the ingredients in the recipe except I doubled it due to the amount of ham I had on hand except I used half greed yogurt and half mayo, only change. This is an incredible recipe! I kept thinking I wanted to add garlic but it did NOT need it. This recipe is truly perfect as is. I used food processor and pulsed every ingredient separately. It helped to create the perfect consistency. Please try this. You will not be disappointed!!!

I used the diced ham in the meat section. I used Miracle Whip rather than Mayo, since Mayo is salty. I used sweet relish, and SWEET HONEY MUSTARD. I also added a tbls of celery seed. Make in advance and let the flavors meld... its amazing.

I've been making something similar for many years, but I use Spam instead of ham and leave out the mustard. Delicious either way!

Added a dash of Sriracha; otherwise preparing per recipe. Served this on toast with cheese and lettuce- whole family loved it (including 2 fickle teen girls). For us, made about 10 servings.

I coarsely chopped everything, color was not the bright red I expected but it tasted well. Dill pickles might have been better,

I have not yet made this, but I have a question: Seems to me that the salad COULD be frozen if the mayo is withheld, to be spread on whatever the salad is served on at the time of presentation. In this case, how long could the mixture stay ok in the freezer?
