Chinese Chicken Salad in Wonder Bread Croustades

Ingredients
- 12 slices Wonder Classic White Bread
- 1 (9.75 ounce) can white chunk chicken breast, drained
- teaspoon ground ginger
- teaspoon garlic powder
- 3 drops hot pepper sauce
- cup finely chopped green bell pepper
- cup shredded carrot
- cup finely chopped red onion
- 2 tablespoons light mayonnaise
- Pinch of salt and pepper, to taste
- cup sliced toasted almonds
Directions
Step 1: Preheat your oven to 400F (200C).
Step 2: Prepare the Wonder Bread Croustades. Begin by cutting the crusts off the Wonder Bread slices. Using a rolling pin, flatten the bread until it's about 1/8-inch thick.
Step 3: With a 2 1/2-inch round cookie cutter, cut circles from the flattened bread. Each slice of bread will yield 2 circles.
Step 4: Lightly grease a mini-muffin pan with melted butter. Gently press each round of bread into the muffin cups, shaping them into bowls. Repeat until all Croustades are formed.
Step 5: Bake the bread circles for 9 to 10 minutes, or until golden brown. Once baked, let them cool slightly before removing them from the pan. Allow the Croustades to cool completely on a wire rack.
Step 6: In a mixing bowl, combine the chicken breast, ginger, garlic powder, hot pepper sauce, green bell pepper, shredded carrot, red onion, and mayonnaise. Season with salt and pepper to taste. Mix well to combine.
Step 7: Fill each Croustade with the Chinese chicken salad mixture, and top with the toasted almonds.
Step 8: Serve immediately, with 2 filled Croustades per serving.
Tips
To toast the almonds, spread them in a single layer in a shallow baking pan. Bake at 350F (175C) for 5 to 6 minutes or until golden brown.

After receiving a recommendation to try this as a fun appetizer, I decided to give it a go. I purchased a popular brand of inexpensive white sandwich bread and quickly assembled the filling for these "cups". I used a large can of chicken, red pepper instead of green, and a dash of fresh ground pepper. I found that a touch more mayo was needed, but not too much. While I'm not sure how healthy they are, these cups are incredibly tasty, reminiscent of a crispy hot chicken sandwich. Perfect for snacking. For my next attempt, I may experiment with adding chopped celery to balance out the almonds, and perhaps try dill and garlic instead of ginger. Such a fun and enjoyable recipe!
