Scrumptious Shrimp Scampi Linguine Recipe
Ingredients
- 1 (16 ounce) package linguine pasta
- 4 tablespoons butter, divided
- 3 tablespoons olive oil, divided
- cup chopped red bell pepper
- cup chopped yellow bell pepper
- 6 cloves garlic, sliced
- 48 large shrimp, peeled, deveined, and tails removed
- cup dry white wine (such as Chardonnay)
- cup clam juice
- 1 teaspoon lemon juice
- 3 tablespoons chopped fresh parsley
- 2 tablespoons heavy cream
- 1 teaspoons crushed red pepper flakes, or to taste
- 1 teaspoon sea salt
Directions
Step 1: Bring a large pot of lightly salted water to a boil. Cook the linguine until tender yet firm to the bite, about 11 minutes. Reserve 1 cup of pasta water, then drain the linguine well in a colander and set aside.
Step 2: In a large skillet, melt 2 tablespoons of butter with 1 tablespoons of olive oil over medium heat. Add the chopped bell peppers and garlic. Cook and stir until the peppers have softened, about 10 minutes.
Step 3: Stir in the shrimp and cook until they turn opaque and pink, about 5 minutes. Transfer the shrimp to a bowl and set aside, leaving the peppers and garlic in the skillet.
Step 4: Add the white wine, clam juice, and lemon juice to the skillet. Bring to a boil over medium heat. Once boiling, add the remaining 2 tablespoons of butter and 1 tablespoons of olive oil.
Step 5: Return the shrimp to the skillet and stir in the reserved pasta water, chopped parsley, heavy cream, crushed red pepper flakes, and salt. Let everything simmer together for about 5 minutes.
Step 6: Add the cooked linguine to the skillet and toss lightly to coat with the sauce. Simmer for another 5 minutes on medium-low heat to allow the linguine to absorb some of the sauce.
Step 7: Serve hot and enjoy!

I have been searching for this receipe for a long time . I would only make one suggestion. I added bay scallops. This made one fantastic meal. it will certainly go in my first choices cookbook. Thanks, mudrogr

Delicious! #shrimp are irrelevant, I used 2# Large (likely a bit more than this calls for. I also substituted 2T butter each time it called for 1.5T olive oil and about doubled the wine, lemon juice, clam juice & heavy cream. I only used about 3/4 of the linguine. Also, I added the crushed red pepper, an equal amount of Chipotle pepper and Tony Chachere's seasoning before the shrimp (better flavor, not too much heat). Served 3 with enough left over for a light, satisfying lunch.

I used one stick of unsalted butter, 1/2 cup dry white wine, 1 1/2 tablespoons garlic, 1 container of Boursin Monterey Jack and spicy pepper cheese dip, spinach, red and yellow dices pepper, mushrooms, zucchini, asparagus, 1 tsp dried basil, 1 tsp dried oregano, 1/2 tsp red pepper flakes, lemon juice, EVOO, whole grain linguini, black pepper and water from boiling the shrimp tails. I thickened the liquid with a little cornstarch and served with fresh cut chives and Parmesan cheese. My husband said it was perfect.

Instead of the pasta water, I added a cup on chicken stock. I used 2 T dried parsley because I didn't have fresh - would probably prefer fresh next time. The family loved it - a keeper.

Oh so good! We loved it. I didn't have clam juice, so I subbed with chicken broth. I also added a splash more lemon juice and cut down on the red pepper flakes because my husband does not like them. I do, so I just added more to my plate. To be sure to have enough sauce, I doubled everything (except shrimp and pasta), and it was perfect. Because of that, I didn't add the pasta water at all. It was garlicy, lemony, and delicious! Just perfect with a fresh green salad and some crusty Italian bread.

This was a scrumptious dish and I liked the versatility of it. My own additions included fresh sliced button mushrooms and cherry tomatoes with the seeds removed. I wanted a thicker sauce after adding the pasta water so I sprinkled some corn starch and stirred just so this delicious sauce stuck to the noodles. I also cut back on the hot pepper flakes to about 1/2 tsp. Definitely will make again.

My family loved this recipe. We fall on the wimpy side when it comes to "hot" food, so I used onions, mushrooms, and halved grape tomatoes (added at the end). I also followed the advice of another reviewer and thickened the sauce along with adding the clams with the clsm juice. I also decided to make it more a seafood scampi and added some crab. My husband Loved it!

Delicious! I decided to add a can of baby clams & a can of chopped clams. The sauce as is was perfect! I also added baby bella mushrooms & finely chopped white onion. My husband LOVED it! Thank you for the great recipe! 👍 😋

This was really good. When hubby likes it, I know the recipe is a keeper! I did not have heavy cream so used a little half and half and Greek yogurt. I also didn’t have clam juice so I used chicken broth. Did not have fresh parsley so used dried. Regardless of theses substitutions it still turned out delish! Thanks for the yummy recipe!

Very tasty dish. I modified the recipe a little bit. I doubled the sauce ingredients except water (used 1 cup of the pasta water), added a few more cloves of garlic, added lightly butter-fried Hawaiian sausage and hot link, omitted the peppers, and added pepper.

It was delicious, my partner really liked it. I think it was to much red pepper for me, but, he likes the spice! I’ll definitely be making again! I tried adding a photo that I took, but it says it’s to large.

Fantastic! Only difference I made was I used 1/8 of a cup of fish sauce instead of the clam juice.

Simple and yummy. My only complaint is the cooking time of the shrimp is a bit much. I would change that to 2-3 mins tops. Mine came out overcooked. Other than that, its a very good recipe!

This was awesome, even with frozen, cooker shrimp. Just defrost in cold water first and just beat in the sauce.
