Patti's Mussels à la Marinière Recipe

Ingredients

This recipe yields 6 servings.

  • 50 fresh mussels, scrubbed and debearded
  • 2 tablespoons extra-virgin olive oil
  • 5 cloves garlic, minced
  • 3 Roma (plum) tomatoes, chopped
  • 3 green onions, chopped
  • 1 cup white wine
  • 1 bunch fresh parsley, chopped
  • 2 tablespoons margarine or butter
  • Salt and ground black pepper, to taste

Directions

  1. Place the mussels in a large bowl and cover them with cold water. Let them soak for about 20 minutes to remove any dirt or sand.
  2. Heat the olive oil in a large stockpot over medium-low heat. Add the minced garlic and cook for 1 minute, ensuring it does not brown.
  3. Add the chopped tomatoes and green onions to the pot. Cook until they are nearly tender, about 5 minutes.
  4. Pour in the white wine, then add the chopped parsley and margarine (or butter). Bring the mixture to a boil.
  5. Let the liquid boil for approximately 15 minutes, or until it has reduced by half. Season with salt and black pepper to taste.
  6. Add the mussels to the pot, cover, and cook for about 10 minutes or until the mussels shells have opened.
  7. Transfer the mussels and sauce to a large serving bowl, discarding any mussels that remain closed.
