Patti's Mussels à la Marinière Recipe

Ingredients
This recipe yields 6 servings.
- 50 fresh mussels, scrubbed and debearded
- 2 tablespoons extra-virgin olive oil
- 5 cloves garlic, minced
- 3 Roma (plum) tomatoes, chopped
- 3 green onions, chopped
- 1 cup white wine
- 1 bunch fresh parsley, chopped
- 2 tablespoons margarine or butter
- Salt and ground black pepper, to taste
Directions
- Place the mussels in a large bowl and cover them with cold water. Let them soak for about 20 minutes to remove any dirt or sand.
- Heat the olive oil in a large stockpot over medium-low heat. Add the minced garlic and cook for 1 minute, ensuring it does not brown.
- Add the chopped tomatoes and green onions to the pot. Cook until they are nearly tender, about 5 minutes.
- Pour in the white wine, then add the chopped parsley and margarine (or butter). Bring the mixture to a boil.
- Let the liquid boil for approximately 15 minutes, or until it has reduced by half. Season with salt and black pepper to taste.
- Add the mussels to the pot, cover, and cook for about 10 minutes or until the mussels shells have opened.
- Transfer the mussels and sauce to a large serving bowl, discarding any mussels that remain closed.
